All that remains is to book, and it is better to do so because – on the contrary – finding a place will be difficult. That of Roscioli, near Campo de ‘Fiori, is recognized as the best carbonara in Rome, thanks to top quality ingredients and the skill of those who work in the kitchen to bring dishes of the highest level to the table. Among the secrets is the red-hot iron pan where the Montecorvo bacon is sizzled. Chef Nabil Hadj Hassen has been working alongside Alessandro Roscioli for 16 years, who carefully selects cured meats and cheeses to offer to the restaurant’s customers and this also affects the attention to the products used for the carbonara. The result is a dish that is simple and powerful at the same time, thanks to the perfect dosage of the ingredients in the hands of chef Nabil. For the pasta, the choice fell on the Benedetto Cavalieri spaghetti which releases a good amount of starch, but remains tough even at the end of cooking and reveals great body when chewed. The basic cream is obtained from Paolo Parisi’s eggs, of which he discards a large part of the egg white to obtain the right consistency, combined with pecorino romano and a percentage of Vacche Rosse parmesan aged 30 months, together with a part of the fat released from the bacon in frying pan, a little water and a mixture of sarawak and cubeb pepper. The mixture is worked in a bain-marie until the ideal temperature is reached and finally whipped with the pasta without returning it to the stove. The bacon, added only in the last steps, comes from Salumificio Pedrazzoli and is carefully trimmed from the part of excess fat, cut into cubes of a certain thickness and browned on a hot iron pan to obtain an external crust without compromising the softness and concentrating too much the salinity of the salami. The result is simply poetry: first in the standings and honestly with detachment.

Having lunch or dinner at the Il Pagliaccio restaurant in Rome means setting out to explore the world from the comfort of your seat in via dei Banchi Vecchi. The philosophy of the Il Pagliaccio restaurant describes it very well by the chef himself: “My kitchen photographs my life, my experiences, my training, my vision of the future. It is a very personal cuisine, but at the same time very focused on customer, with whom empathy and trust are established during a tasting journey, as between two people who go on a journey together “.

The Genovese chef’s goal is to make guests become children again, while remaining adults. Through a journey through flavors and memories you can really have a beautiful gastronomic experience. There is no a la carte menu: you can therefore choose from four tasting menus. The Circus menu (185 euros per person excluding drinks) allows you to range from East to West, in ten courses in which dishes and emotions are mixed. The Orme menu (eight courses, 165 euros per person excluding drinks) focuses more on memories, on a journey through time rather than space. On the other hand, the Terrae menu is centered on the earth (six courses, 125 euros per person excluding drinks), which emphasizes respect for the earth, with a choice of highly sustainable ingredients. The only tasting available only for lunch is the Intermezzo (four courses, 85 euros per person), which retraces elementary stages of light experiences. Very characteristic restaurant and, given the location a few steps from the Trevi Fountain, it has all the air of being a restaurant for tourists, or those restaurants that in Rome, as in every other part of the world,

offer a standard menu with products , hopefully, of medium quality. This is not the case for Chianti where every dish is prepared with top quality products. Excellent appetizers, with an impregnable platter of cold cuts, and all the first courses. But exceptional is the meat, fillet or steak. Attentive service and good price: absolutely not to be missed.
